Aromatically, they tend to have citrus flavours – lemon, lime, gooseberry – as well as herbal characteristics, often compared with cut grass or nettles.
Located at the foot of the Montagne Noire, the estate benefits from the alternation of hot days and cool nights: an ideal climate for the development of lime and citrus aromas.
Domaine Peirière is a large wine estate in the heart of the Minerve area. Olivier, an expert vintner who inherited the property and the family tradition, carefully tends the vines.
The 230-hectare estate, in the heart of the Minervois appellation area, gets plenty of sunshine year round but cools down at night because the Montagne Noire is nearby, resulting in an ideal climate that fosters the development of the grapes’ aromas. Thirty years ago it was replanted will the full range of sun-loving varieties. The harvest, which takes place at night, is completely fermented on the estate in cellars boasting state-of-the-art equipment.
